The man you see is making Pathooras, a roti, or chapati like eatable, that is made of Daal (pulses), and flour. Its really tasty, crispy, one of the specialities of the rich Lahori cuisine, Even more interesting is to watch the way it is cooked. The man takes a dough and after flattening it on his palms, twists it and tossess it into the air beore it falls in the big frying pan filled with oil.After a few seconds its taken out of the pan, and served with Channa (grains) and pickle, mind you its drenched in oil, and to enjoy you have to eat it before the oil drops falling get dry.
